To soften the pepperoncini for the meatloaf, try slicing them and sautéing them in a bit of butter or olive oil for a few minutes before mixing them into the meatloaf. This will mellow their spice and bring out a touch of sweetness, more like the pot roast version. Glad you’re a fan of both recipes!

Made this for dinner tonight. I love Mississippi Pot Roast, use your recipe every time. In the pot roast version, the pepperoncini soften and almost have a sweetness to them. In the meatloaf, due to much shorter cooking time, they stay hot and spicy. We liked the meatloaf, but love the pot roast! Any way to soften those pepperoncini for the meatloaf?

My whole family of 5 loved this recipe. Even my picky 7 year old gave it 2 thumbs up (although he had it with ketchup) he never gives anything 2 thumbs up. I will be adding it to our rotation.
