The only thing you did wrong was to use the wrong ingredient. Self-rising flour cannot be used in recipes calling for all-purpose flour. Self-rising flour can only be used in recipes specifically calling for it, and there are very few recipes that do. Give it another try using all-purpose flour. You’ve got this!

I put the butter in the fridge and I mixed one tablespoon of sour cream to a cup of milk and refrigerated it. Everything was cold when I put it in the flour.
The biscuits were flat and you could taste the salt I put in, yuck. They barely rose at all.
WHAT DID I DI WRONG!
I have been married 57 years and I STILL cannot make biscuits anywhere near to my husbands mother. HELP

Phenomenal biscuits! I made a triple batch and froze them. I pulled out what I needed this morning and they’re DELICIOUS!!! the ones I used to buy the store bought frozen ones but not anymore!

Don’t give up! Crumbly biscuits usually mean there wasn’t enough moisture or the dough was overworked. Double-check your measurements, especially for the liquid, and try mixing just until combined to avoid overworking. Also, make sure your butter was cold—it’s key for the perfect texture!

My goodness! Nothing about the recipe indicated it was an ancient ancestral recipe. Rachel does not deserve the level of hostility you dishes out to her. Guess what? It has been raining for about 4 days in my location so I needed to adjust my dry and liquid ingredients a bit to accommodate for environmental conditions. When we have dry weather, the ingredient measurements are more accurate for me. Rachel’s recipes are amazing and she deserves respect. Love you Rachel (and Caitlin). Hugs!

I made these last night using my food processor. It worked well and the liquid is the right amount unlike the comment below says. With Flour on the counter keeping the content from being too sticky. Just add flour to your hands if it’s sticky and it will be fine. Anyway, it’s a great recipe and I will be using it repeatedly. Thanks!

Sorry to hear you had such a bad experience! It sounds like you simply didn’t add enough flour, which can happen with older methods of measuring taught before the 1980s. Perhaps try the recipe from your great grandmother using lard and honey.

Amounr of milk is excessive. This recipe produces very sticky drop biscuits! At the time when cooks were making biscuits every day to feed their families, as my great-grandmothers did, they did not HAVE any kind of refrigeration! Ergo: they didn’t chill anything. They would have used lard, which I did. I added at least 1/4 cup and maybe 1/3 cup flour to make this nasty dough even handleable on a spoon! Our ancestor would not have used sugar; she didn’t have it. She had honey from a bee tree. Sugar was luxurious and would have had to come up river from New Orleans! Your recipe is one more that I’ll toss in the trash. The only part you got right was the amount of baking powder. AND, the ancestors used soda, and called these “soda biscuits”.
